The Waterboy is a neighborhood restaurant in Midtown Sacramento that has been cooking delicious food and providing great service since 1996. We feature a seasonal menu, inspired primarily by the beautiful cuisines of northern Italy and southern France. In addition, we offer a diverse wine list and a full bar featuring artisanal cocktails and aperitifs.

It’s safe to say he knows what he’s doing around here, so copying his order probably wouldn’t be the worst move.  This dish features pasture-raised California Berkshire pork from the wonderful folks at Sweet Water Farm & Ranch Co. They’re regenerative ranchers in the Central Sierras who are deeply committed to ethical practices that respect the animals and honor the land.
